Super Simple Seafood Curry
One of the fastest and easiest curries I have made so far. Only takes about 20 minutes from scratch.

- 1 tablespoon vegetable oil
- 1 can (400 grams) coconut milk
- 1 tablespoon fish sauce
- 1 tablespoon brown sugar
- 1 red or yellow bell pepper
- ¼ cup Thai red curry paste (medium spiciness)
- 1 cup snow peas
- 2 tablespoons lemon or lime juice
- 200 grams white fish, cut into cubes (I used polar cod)
- 200 grams shrimps, cleaned and peeled
- ½ cup fresh basil, chopped
Heat up the vegetable oil in a deep frying pan over medium heat.Add the curry paste and cook for about 1 minute. Add the remainder of the ingredients: fish, shrimps, snow peas, coconut milk, fish sauce, lemon/lime juice, bell pepper, everything except for the basil.
Bring to boil, reduce the heat to low and simmer until the fish and shrimps are done, will take between 7-9 minutes.
Take the curry off the heat, stir in the chopped basil and allow to stand for about a minute before serving.
Serve warm, with or without a garnish of plain rice and a lemon/lime wedge.
