- 2 tablespoons olive oil
- 3 tablespoons tomato paste
- 1 large ripe tomato, finely chopped
- ½ green bell pepper, finely chopped
- 1 green onion, finely chopped
- ½ small red onion, finely chopped
- 1 tablespoon parsley, finely chopped
- 1½ cups bulgur wheat
- 1 teaspoon ground cumin
Heat up olive oil in a medium deep frying pan or sauce pan. Ad tomato paste and fry for a couple of minutes, until fragrant.
Soak 1½ cups of bulgur wheat in 1 cup of water for about 10-15 minutes. Fluff occasionally until water is fully absorbed.
Add the soaked bulgur to the pan with the tomato paste. Add the tomatoes, bell pepper, onions, parsley and ground cumin. Mix well, until the bulgur is well coated in tomato sauce.
Can be served cold or hot. Goes well with any meats or over a fresh pita bread.
