Ingredients
14smallpotatoes, cut in half
14smallchampignon mushrooms, cut in half or quarters
1smallonion, chopped
4clovesgarlic, minced
2tablespoonsbutter, melted
1teaspoonfresh rosemary, minced
pinch of salt, to taste
freshly ground black pepper, to taste
Instructions
Preheat oven to 200°C (400°F).
In a large mixing bowl, combine all the ingredients and toss to coat evenly.
Arrange the mixed ingredients in a baking dish and bake for 15 minutes. Toss with a wooden or silicone spatula and bake for another 15 minutes, or until the potatoes are tender and golden brown.
Remove from the oven and garnish with some fresh rosemary sprigs.Enjoy!
