Chicken Schnitzel

Our version of the famous Wiener Schnitzel, made with chicken breasts.

Ingredients

  • 4 chicken breasts
  • 1 cup bread crumbs
  • 1 cup all-purpose flour
  • 1 teaspoon Cajun spice mix
  • salt, to taste
  • freshly ground black pepper, to taste
  • 2 large eggs
  • vegetable oil, for frying

Instructions

  • Place the flour into a large flat plate. Add the Cajun spice mix, add the salt and pepper. Mix through.
  • Place the bread crumbs into another large flat plate.
  • In a deep plate slightly whisk the eggs.
  • Take one chicken breast, wrap it in some food plastic wrap. Flatten it out with a steak hammer. Like in the picture.
  • Now take the flattened chicken breast and coat with the prepared flour on all sides.
    Then dip it into the whisked egg.
    Now coat with bread crumbs on all sides.
  • Heat up the oil in a large frying pan/skillet over medium heat. Fry the coated chicken breast until golden brown on both sides and the chicken is cooked through. This will take about 6-7 minutes per side.
    Repeat for all the remaining chicken breasts.
    Depending on the size of the pan and the chicken schnitzels, it might be better to do one at a time, not to overcrowd the frying pan.
  • Once the schnitzels are done, transfer to the paper towel, to absorb excess oil.
    Serve warm with a side of potato salad, or fresh veggie salad, or any side dish you prefer.
