Mini Pizzas

Pizza can be made with a huge variety of toppings, anything you like. It can be made into any desired shapes and sizes. It is truly a universal dish. And sometimes ordering a pizza might not measure up to your expectations. So ….. why not make your own pizza?

The dough is super easy to make, and does not take a whole lot of time. All you need is just a few ingredients and about 20 – 30 minutes of time.

For starters you need to make the dough. In a medium bowl combine warm (not hot) water, oil, instant dry yeast and salt. You can also add some dries oregano or dried basil to the dough mix, if you wish. You can either use an electric mixer fitted with a dough hook, or your hands. As you like.

Gradually add the flour, until a soft dough forms and starts to pull away from the sides of the bowl. The reason for gradually adding the flour, and not all at once, is because you might not need all the flour at the end.

Once the dough is pulling away from the sides of the bowl, flip the bowl onto a work bench and with a bit of flour, start kneading the dough. Knead for about 2-6 minutes, depending on the type of flour or if you are kneading by hand. The dough should be smooth and elastic, but not stick or leave residue on your hands.

Cover the dough with a clean towel and let it rest for about 10 minutes.

In the meantime, prepare your pizza toppings. Hams, salamis, bell peppers, tomatoes, cheese ….. whatever your stomach desires. =)

Time to get started on the mini pizzas. Preheat the oven to 220-230°C (430-450°F). Grease a baking sheep or line it with parchment paper.

Once the dough has rested for a little bit, sprinkle some flour on your work bench, place the dough on the floured surface and roll out into a circle approximately 1 cm thick.

Using cookie cutters or a knife of a glass, cut out shapes of desired sizes.

Place on the prepared baking sheet.

Top with some tomato paste, or some tomato sauce. Place the desired topping, sprinkle with shredded cheese. Brush the exposed crust with some olive oil or vegetable oil.

Bake for 18-20 minutes.

After taking the pizzas out of the oven, allow to cool for about 5 minutes, otherwise the filling/topping might be too hot.

Ingredients

  • 100 grams salami
  • 100 grams ham
  • 100 grams mozzarella cheese, grated
  • 2 medium tomatoes
  • 1 medium bell pepper
  • 3 tablespoons tomato paste
  • 1 tablespoon olive or vegetable oil, for brushing
