Russian Pancakes with milk (Oladushki)

Simple recipe for Russian style pancakes made with whole milk and fried in oil. Great for breakfast for the whole family.

As a kid these pancakes were one of my favorite treats for a Sunday breakfast. Imagine waking up to a sweet smell of freshly made pancakes ….. mm mm … delicious. While my parents were busy preparing them, I was busy stealing them one by one from the plate, so by the time breakfast was ready, I no longer wanted to eat. =) But I guess all the kids are like that, at a certain age.

Now I want to share this simple recipe with you, and maybe you can also surprise you loved ones with such a breakfast.

In a medium mixing bowl whisk together the egg, sugar and salt, until well combined.

Add the baking powder. Mix well.

Add half of the flour and half of the milk. Mix everything until well combined, making sure there are no lumps.

Add the remaining milk, and gradually add the remaining flour, mixing well after each addition of flour. The consistency of the batter should be similar to thick sour cream.

Important: you might need more or less flour, depending on the quality and type of flour. Therefore it is better to add the flour gradually.

Heat up oil in a wide, flat frying pan on medium-low. It is better, so that the pancakes get a chance to cook through without being burned on the outside.

When the oil is hot, using a table spoon, place about 1 full tablespoon of batter into the hot oil. The batter will expand a bit, therefore do not place the pancakes too close to each other.

Fry the pancakes until golden brown on each side. For me it took about 2-3 minutes per side.

The pancakes will also rise once you flip them to the other side.

Transfer the fried pancakes onto a paper towel, to absorb the excess oil. Continue frying pancakes from the remaining batter.

Serve pancakes hot or cold with your favorite jams, condensed milk, honey or sour cream. Honestly, they go well with anything.

  • 1½ – 2 cups (240 – 320 grams) all – purpose flour, depending on the flour
