If you feel like having something tasty and easy to make, and have some leftover minced in your fridge/freezer, then these delicious and easy to make meatballs are the thing for you.
Preheat the oven to 200°C (390°F). Oil/grease a 38 cm (15”) baking dish. Set aside.
In a medium mixing bowl mix minced meat, salt, pepper, egg, bread crumbs, onion and Worcestershire sauce. Add cooked rice. Mix well.
Take a handful of the mix and form into a ball. Place in the prepared baking dish. Continue until all the meat mixture is finished. Bake for 30 minutes.
Prepare the sauce. Pour the sauce over the meatballs and bake for another 40 minutes.
Serve over potatoes, veggies or just on their own.

Baked Meatballs with Rice in Tomato Sauce

Ingredients
For Meatballs:
- 500 g Mixed minced meat (pork and beef)
- 1 Large onion, peeled and chopped or minced
- 125 g Cooked white rice (I used Uncle Ben's Long rice)
- Salt
- Freshly ground black pepper
- 1/2 cup Bread crumbs (best to use freshly made ones, but dried will work too)
- 1 Large Egg
- 2 Tablespoons Worcestershire Sauce (optional, but gives nice flavor)
- 2 Tablespoons Oil
For Tomato Sauce:
- 400 g (1 can) diced, peeled tomatoes
- 1 Medium carrot, peeled and shredded on a small shredder
- 1 Medium onion, peeled and chopped
- 2 Tablespoons Tomato Paste
- 2 Tablespoons Sour Cream
- 250 ml (1 cup) Water
- Salt/Pepper to taste
- 1 teaspoon Dried Oregano (optional)
- 1 Tablespoon Oil
Instructions

- In a medium mixing bowl mix minced meat, salt, pepper, egg, bread crumbs, onion and Worcestershire sauce. Add cooked rice. Mix well.
- Take a handful of the mix and form into a ball. Place in the prepared baking dish. Continue until all the meat mixture is finished. Bake for 30 minutes.
- While the meatballs are in the oven, start preparing the sauce. In a frying pan, heat up the oil on a medium/high heat. Add onion and fry for 2 minutes, or until transparent. Add carrots, fry for 2 minutes. If using, add oregano. Add the diced tomatoes and mix well. Dilute tomato paste in water and pour over the sauce. Add salt and pepper.
- Bring to boil. Turn heat down to medium and let it simmer for about 10 minutes, stirring occasionally.
- Add sour cream and mix well. Remove from heat and set aside until needed.
- Take the meatballs out of the oven and add the prepared sauce. Bake for another 40 minutes at the same temperature.
- Serve with mashed potatoes, or a fresh salad. Frankly, can be eaten on their own as well. Enjoy!!!
