First time we made this soup I was surprised at how good it tasted and how easy to make it was. You need just a few ingredients and the result is hearty, tasty and very filling. You will be amazed by how easy it is to make this soup.
Heat up the butter in a pot (same pot you want to make the soup in). Once the butter melted, add the chopped onion(s).
Fry the onions for about 2-3 minutes before adding the minced meat. Once the meat has been added, fry for about 6-7 minutes, until the meat is no longer pink.
Add the canned tomatoes (without juice) and the beef broth. Bring to boil.
Once boiling, add the frozen veggies and canned corn.
Bring to boil again and cook for about 10-15 minutes, until the veggies are done. Note: if the frozen veggie mix has corn, you don’t need canned corn.
Serve with sour cream and fresh parsley. Enjoy!
Beef Soup

Ingredients
- 1 large (2 medium) onion
- 2 tablespoons butter
- 800 grams minced beef
- 2 Liter beef broth
- 2 cans (400 grams each) tomatoes
- 800 grams frozen vegetable mix (broccoli, cauliflower, carrots, etc)
- 1 can (300 grams) corn
- Salt (to taste)
- Freshly ground black pepper (to taste)
- 1 teaspoon dried basil (optional)
Instructions
- Peel and chop the onion(s). In a medium – large pot, melt the butter. Add the chopped onions. Fry the onions for 2-3 minutes.
- Add the minced beef to the onions. Fry together for about 6-7 minutes, until the meat is no longer pink.
- Drain the canned tomatoes. Add to the pot with the meat. Add the beef broth. Bring to boil.
- Once boiling, add the frozen vegetable mix and the canned corn (unless there is corn already in the vegetable mix, then you don't need the canned corn). Bring to boil again, and cook for about 10-15 minutes, until the frozen vegetables have cooked through.
- Serve with sour cream and freshly chopped parsley. Enjoy!
