Cottage Cheese Buns (Vatrushki)

Vatrushka is an Eastern European type of pastry, made with yeast dough and quark (variation of cottage cheese). It is a very popular type of pastry in Russia and Ukraine and is just delicious.

Made with a soft and puffy yeast dough and creamy cottage cheese filling, so tasty and a great way to feed cottage cheese to picky eaters. I was a picky eater as a kid and I think this was one of the ways my parents could get me to eat cottage cheese. 🙂

Ingredients

For the yeast dough:

  • 1 large egg
  • 2 tablespoons white granulated sugar
  • ½ teaspoon vanilla extract
  • ¼ teaspoon salt
  • 250 ml milk
  • 500-550 grams all-purpose flour
  • 1 tablespoon dry active yeast
  • 80 grams butter

For the filling:

  • 500 grams cottage cheese
  • 2-3 tablespoons white granulated sugar
  • 1 large egg
  • ½ teaspoon vanilla extract

For the egg wash:

  • 1 large egg
  • 1 tablespoon milk

Instructions

Make the yeast dough:

  • Whisk together the egg, vanilla extract, salt and sugar.
    Warm up milk to about 40°C (4°F). Add the warmed milk to the egg mixture.
  • Mix together flour with dry active yeast.
  • Add the egg mixture into the flour mix and whisk together, at first with a whisk, then using your hands. The dough will be a bit sticky.
  • Melt the butter and knead it into the dough.
  • The dough should turn out to be uniform and soft, but not sticking to your hands. Place the dough into a large bowl, cover with food plastic wrap and place in a warm place for about 1-1,5 hours.
  • The dough should double in size.

Prepare the filling:

  • In a medium bowl mix together cottage cheese, egg, sugar and vanilla extract. Crush it a bit with a fork.
    Set aside until needed.

Roll out the dough balls:

  • Once the dough has grown, take it out, knead a few times and split into 12 equal pieces. Roll each piece into a ball and place on a grease baking tray (or line it with parchment paper). Give 1-2 cm space between the balls.
    Cover with a clean towel and allow to stand for about 20 minutes.
  • Using a bottom of a glass/cup or your hands, make an indent in the center of each ball, almost to the very bottom.
  • Fill the indents with the prepared cottage cheese filling.
    Whisk together the egg and milk, brush the filled buns and let them stand for another 10 minutes.
  • Preheat the oven to 190°C (375°F). Bake the buns for about 25 minutes, or until golden brown and the dough is cooked through.
  • Transfer the baked buns to a wire rack to cool down before serving. Can be eaten warm or cold.
    Can be reheated in the microwave later.
  • Enjoy!
