Keto Meatloaf

This was my first time making a meatloaf, honest. 🙂 And to my surprise it turned out soft and juicy, even though it was from minced beef (beef and juiciness were always and issue for me :)) And it’s Keto friendly too.

Equipment wise you don’t need much, just a cutting board, frying pan and a deep baking form/tray, to collect all the juices … and cheese 🙂

Equipment

Ingredients

  • 900 grams minced beef
  • 1 medium onion
  • 1 stalk celery, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon chilli powder
  • 100 grams grated cheddar
  • 50 grams almond flour
  • 25 grams Parmesan, grated
  • 2 large eggs
  • 1 tablespoon soy sauce
  • salt, to taste
  • freshly ground black pepper, to taste
  • 6 strips bacon

Instructions

  • Wash and chop celery, onion and garlic.
  • Preheat the oven to 200°C (395°F). Grease a deep baking dish with oil or cooking spray. Set aside until needed.
  • In a medium frying pan, heat up the olive oil over medium heat. Add the onion and celery and cook until soft, about 5 minutes. Add in garlic, oregano and chilli powder. Cook until fragrant, about 1 more minute.
    Allow the mixture to cool slightly, enough to be able to handle with hands.
  • In a large bowl combine the minced beef, fried vegetables mix, eggs, Parmesan cheese, cheddar cheese, almond flour, soy sauce and season with alt and freshly ground black pepper. Mix through well. Shape into a large loaf and place into the prepared baking dish.
  • Arrange the bacon strips on top of the loaf.
  • Bake in the preheated oven for about 1 hour, or until cooked through.
    Tip: if the bacon is cooking too fast, you can cover with a sheet of aluminum foil.
  • After taking the dish out of the oven allow the meatloaf to stand for about 5-10 minutes, covered with aluminum foil, to absorb the juices.
  • Slice into servings and serve with a side of cauliflower rice or a fresh vegetable salad.
