- 3 cups water
- 50 grams glass noodles
- 2 medium carrots, peeled
- ½ medium cucumber
- 2 cloves garlic, finely minced
- 1 teaspoon salt
- 1 teaspoon crushed chili pepper
- 1 green onion, finely chopped
- 1 tablespoon vegetable oil
- 1 teaspoon sesame oil
- 1 teaspoon soy sauce
- 1 tablespoon apple cider vinegar
Using a really sharp knife or a mandolin, if you have, cut the carrots and cucumber into thin strips, like spaghetti. Set aside.
In a medium saucepan, bring to boil the water. Once boiling, add the glass noodles and boil for 1 minute.Add the carrot strips to the same saucepan and boil for an additional 1 minute.Take off the heat and let the carrot strips and glass noodles soak for another 2 minutes in the hot water.Transfer the carrots and noodles into a large sieve and rinse with cold water, to stop the cooking process.Transfer the carrots and noodles into a large mixing bowl, place the garlic, pepper and green onions on top.Set aside. Heat up a skillet over high heat. Once the skillet is hot, carefully add the vegetable oil and allow to heat up, about 30 seconds.
When the oil is hot, carefully pour the hot oil over the spices in the mixing bowl.Add the sesame oil, soy sauce and apple cider vinegar.Give the salad a good but gentle toss, allow to completely cool down. Transfer to a serving bowl before serving and enjoy!
