Ingredients

  • 2 aubergines (medium sized)
  • 1 small onion
  • 2 tbsp vegetable oil
  • 1 teaspoon salt

Instructions

  • Grill or bake the aubergines until soft. A toothpick should go through easily. For best results grill them or bake them on an open flame. This offers the best flavor.
  • Peel the skins and cut the pulp into cubes. Chop the onion coarsely, not too small.
  • Shred the eggplant pulp with a blender, together with the oil and salt.
  • Manually mix in with a spoon the chopped onion.
    Do not blend it again after adding the onion! The onion will provide the crunch of the spread.
  • Serve with nachos, dry crisp bread or cracker bread.
