Heat up a tablespoon of oil in a frying pan and fry the egg until your desired readiness.
While the egg is frying, make two toasts. Spread some butter on one side of each toast.
On a work bench or a large chopping board, lay in one line 3-8 bacon strips, depending on how long and wide they are and how large the toasted bread is. I had short but wide bacon strips, therefore I needed 6 strips, as you can see on the image bellow. The bacon will have to be long enough to cover the whole sandwich with everything in it.
Lay one piece of toast, buttered side up in the middle of the arranged bacon strips. Place a piece or two of cheese, on top place the fried egg, season with salt and pepper as desired. Place the second piece of toast, buttered side down, on top of the egg. Wrap the sandwich with the bacon, then lay another line of bacon strips to cover the other side of the sandwich. You are making a sort of an envelope.
Preheat the oven to 180 - 200°C (356 - 392°F). Line a baking dish with parchment paper and set aside.
Heat up a tablespoon of oil in a frying pan, place the wrapped sandwich in the hot oil and fry for about a minute each side, just to give the bacon nice golden color. Be careful when flipping the sandwich, the bacon might start unwrapping, try to use to spatulas or forks to keep it intact.
Once the bacon on the sandwich is a nice golden color on both sides, take off the heat and transfer to the prepared baking dish. Loosely cover with a piece of foil and place in the preheated oven for about 5-10 minutes. This part is for the cheese in the middle to warm up and melt. Take out of the oven, transfer to a serving plate and serve with fresh vegetables while still hot.Enjoy!
