Ingredients
2¼cupsall-purpose flour
1tablespoonbaking powder
3tablespoonswhite granulated sugar
½teaspoonsalt
1teaspooncinnamon
2large eggsseparated
½cupvegetable oil
2cupsmilk
1teaspoonvanilla extract
Instructions
Preheat your waffle iron, spray with cooking spray, or as I did brush with some oil.
In a large bowl combine flour, baking powder, sugar, salt and cinnamon. Whisk through until mixed well.
In another bowl, using a hand mixer, beat egg whites until stiff peaks form. Set aside.
In a third bowl whisk together egg yolks, vegetable oil, milk and vanilla extract.
Add the wet ingredients (egg yolk mixture) into the dry ingredients and mix thoroughly.Carefully fold in the egg whites. I added the egg whites in two additions, mixing well after each addition.
Pour enough batter into the preheated waffle iron to cover the surface, close and cook according to the manual instructions.
Serve immediately with your favorite topping, whipped cream, honey, berries, icing sugar and so on.Enjoy!
