Bulgur with Garlic and Mushrooms

- 1 large onion, chopped
- 1½ teaspoons vegetable oil
- 3 cups mushrooms, chopped
- ¾ cups Bulgur
- 1½ cups water
- 2 teaspoons dry vegetable bouillon
- ½ teaspoon garlic powder
- ¼ teaspoon freshly ground black pepper
- fresh parsley, chopped
Heat up the oil in a large frying pan over medium heat.Add the chopped onion and fry until translucent and starting to become soft. Add the chopped mushrooms to the fried onion, and fry until beginning to brown. Stir often.
Add bulgur to the frying pan and continue stirring, until lightly browned.
Add water, the dried bouillon, garlic powder and freshly ground black pepper. Stir through, cover with a lid.
Reduce the heat to low and cook for about 15-20 minutes, or until the bulgur is tender and all the liquid is gone.
Remove from heat, mix in the chopped parsley and serve immediately.
