Cauliflower Rice

Super simple to make and a healthy alternative to normal rice.

Equipment

  • Food processor
  • Deep frying pan

Ingredients

  • ½ cauliflower
  • 1 tablespoon olive oil, for frying
  • salt, to taste
  • freshly ground black pepper, to taste
  • 1 tablespoon fresh parsley, chopped

Instructions

  • Clean and wash the cauliflower. Cut it in half. Roughly chop half of the cauliflower, keep the other half in the fridge for future use.
  • Place the the chopped cauliflower pieces into a food processor and process, until flaky, just a few spins.
  • Heat up the olive oil in a deep frying pan over medium heat.
    Add the cauliflower rice, and fry for a couple of minutes.
  • Season with salt and pepper, sprinkle with parsley. Fry for another minute or until cauliflower reaches desired tenderness, I like mine a bit crunchy.
  • Serve hot, as a side to meat, fish, poultry or make it into a fried rice, by adding vegetables, eggs and so on.

Notes

Cauliflower rice can also be steamed in a steamer, or you can transfer it into a microwave safe bowl, cover with plastic wrap and microwave for 2-3 minutes.
