Chocolate-Banana Doughnuts with Chocolate Glaze

Ingredients

For the doughnuts:

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • ¼ teaspoon ground nutmeg
  • 1 large egg
  • cup packed brown sugar
  • ¼ cup milk
  • ¼ cup Greek yogurt
  • 2 tablespoons butter, melted
  • teaspoons vanilla extract
  • ¼ cup pureed banana
  • ¼ cup unsweetened cocoa powder

For the chocolate glaze:

  • 1 cup powdered sugar
  • 4 tablespoons unsweetened cocoa powder
  • ¼ teaspoon salt
  • 4 tablespoons milk
  • ½ teaspoon vanilla extract

Instructions

  • Preheat the oven to 180°C (350°F). Spray a donut pan/form with non-stick cooking spray or grease with butter. Set aside.
  • In a large bowl combine flour, baking powder, baking soda and nutmeg. Mix well. Set aside.
  • In another bowl whisk together the egg, brown sugar, milk and yogurt, until well mixed.
    Add melted butter and vanilla and whisk until fully combined.
  • Pour the wet ingredient mix into the dry ingredients and mix through until just combined.
    Add the pureed bananas and mix through.
  • Transfer the batter into a plastic bag or piping bag, and pipe the batter into the prepared forms/pans, filling each cup about 2/3 of the way.
  • Bake the doughnuts for 10-12 minutes, or until toothpick inserted into the center comes out clean.
  • Allow the doughnuts to cool for about 10 minutes before removing from the pan onto the wire rack to cool completely.

Make the chocolate glaze:

  • In a bowl combine all the ingredients for the glaze, and mix through. If the glaze is too thick add another tablespoon of milk, if too runny add a bit more cocoa powder and powdered sugar.
  • After the doughnuts cooled, dip each doughnut into the glaze and allow the excess to drip off before placing the doughnut back on the wire rack for the glaze to harden a bit before serving.
    You can also sprinkle the glazed doughnuts with sprinkles if you want.
