Chocolate Muffins

Ingredients

  • 250 grams self-raising flour
  • 25 grams cocoa powder
  • 2 teaspoons baking powder
  • 175 grams caster sugar
  • 175 ml milk
  • 2 large eggs
  • 100 ml olive oil or vegetable oil
  • 75 grams plain chocolate chips
  • 1 - 2 teaspoons vanilla extract
  • salt, to taste

Instructions

  • Preheat oven to 170°C (338°F). Line muffin tray with paper muffin cases or grease the tray.
  • In a medium bowl sift together flour, cocoa, salt and baking powder.
    Add sugar, mix well.
  • In a separate bowl beat the eggs with a whisk or fork, until lightly beaten.
    Add the milk, oil and the vanilla extract. Mix well.
  • Mix the dry and the wet mixtures together, until well blended.
    Mix in the chocolate chips. (I made a bit more of the chocolate chips, just chopped milk chocolate, to sprinkle on top.)
  • Spread the batter between the prepared muffin cups, filling about ⅔ of the muffin cup.
    Bake for 20 minutes, or until a toothpick inserted into the center of the muffin, comes out clean.
  • Allow to cool in the tray for about 10 - 15 minutes. Transfer to a wire rack to cool completely.
