- 500 grams lean beef
- 1 large onion
- 150 grams sour cream
- 1 tablespoon tomato paste
- 150 ml beef broth (stock) or water
- salt, to taste
- freshly ground black pepper, to taste
- 1 clove garlic, minced
- 150 grams mushrooms
- 2 teaspoons Dijon mustard
- 2 teaspoons Worcestershire sauce
- 3 tablespoons butter
- 2 tablespoons fresh parsley, chopped
- ½ teaspoon paprika
Cut the beef into thin strips.
Cut the onion.
Heat up the 1 tablespoon of butter in a large frying pan over medium heat. Place the beef strips, just enough to cover the base in one layer.Cook beef through and transfer to a plate. Repeat with the remainder of the meat. Add the remaining butter to the same frying pan and fry the onion until it becomes translucent, about 3-4 minutes.Add the mushrooms and cook for an additional 5 minutes, tossing occasionally, until mushrooms are golden. Add the flour, mix through and season with salt and pepper. Add minced garlic and cook until fragrant, about 1 minutes.
Add broth, sour cream, Worcestershire sauce, Dijon mustard, tomato paste and paprika. Mix thoroughly and bring to a gentle simmer, while stirring.
Return beef to the pan and stir to combine. Cover with a lid and simmer for 5-10 minutes.
Serve over Cauliflower rice and Enjoy!
