The sauce is simple, yet tasty. Requires just a few ingredients and a bit of time. Goes really well with plain corn chips or could also be served over pasta.
2tablespoonsolive oil or vegetable oil, for frying
Instructions
Heat up olive oil in a deep frying pan.
Add minced meat to the frying pan and fry, on medium high, until golden brown. About 5 minutes.
While the meat is frying, peel and chop garlic cloves and cut the bell pepper (optional) into small cubes.
Add to the browned meat. Fry for another 2 minutes.Season with salt and pepper, to taste.Add oregano and mix well.
Add tomato paste, mix well. Add caned tomatoes (if they are whole, cut them or squash them) with the juice. Add the drained kidney beans. Add water and mix well.
Bring to boil. Once boiling, turn the heat to medium - low, cover with a lid and simmer for about 20 - 25 minutes. The liquid will decrease by half, and the sauce will become thicker and creamier.
Serve with sour cream and shredded cheese, with plain corn chips on the side.
