Meat Sauce for Nachos

The sauce is simple, yet tasty. Requires just a few ingredients and a bit of time. Goes really well with plain corn chips or could also be served over pasta.

Ingredients

  • 500 grams minced meat (pork and beef)
  • 1 can (400 grams) tomatoes (no skins)
  • 1 can (400 grams) kidney beans (drained)
  • ½ cup water
  • 2 tablespoons tomato paste
  • 2 cloves garlic
  • salt, to taste
  • freshly ground black pepper, to taste
  • 1 teaspoon oregano
  • 1 red or yellow bell pepper (optional)
  • ½ can (200 grams) corn (optional)
  • 1 cup (250 ml) sour cream
  • 1 cup shredded cheese
  • 2 tablespoons olive oil or vegetable oil, for frying

Instructions

  • Heat up olive oil in a deep frying pan.
  • Add minced meat to the frying pan and fry, on medium high, until golden brown. About 5 minutes.
  • While the meat is frying, peel and chop garlic cloves and cut the bell pepper (optional) into small cubes.
  • Add to the browned meat. Fry for another 2 minutes.
    Season with salt and pepper, to taste.
    Add oregano and mix well.
  • Add tomato paste, mix well.
    Add caned tomatoes (if they are whole, cut them or squash them) with the juice.
    Add the drained kidney beans.
    Add water and mix well.
  • Bring to boil. Once boiling, turn the heat to medium - low, cover with a lid and simmer for about 20 - 25 minutes.
    The liquid will decrease by half, and the sauce will become thicker and creamier.
  • Serve with sour cream and shredded cheese, with plain corn chips on the side.
