When you feel like eating something light and tasty, with paste with veggies is a great option. Just a few ingredients and 20 minutes of cooking time and you have a delicious dinner or lunch.

Equipment

  • Frying Pan
  • Chopping board
  • Medium pot (for pasta)

Ingredients

  • 1 - 2 medium zucchini
  • 1 - 2 medium carrots
  • salt, to taste
  • freshly ground black pepper, to taste
  • 1 teaspoon paprika
  • 1 teaspoon oregano spice
  • 1 medium bell pepper
  • shredded cheese, for garnish (optional)
  • chopped parsley, for garnish (optional)
  • 1 tablespoon olive oil

Instructions

  • Boil the pasta. Any kind of pasta that you like or have at home. I used penne.
  • Chop zucchini, carrots and bell pepper, to desired size.
  • Heat up olive oil in a frying pan.
    Add carrots. Fry for about 3 minutes. Add zucchini and bell pepper.
    Season with salt and pepper. Add paprika and oregano.
    Fry the vegetables for about 4 - 8 minutes, until they reach your desired doneness.
  • Drain the pasta and add to the frying vegetables.
    Mix through, fry for about 1 minute and you are done.
  • You can add chopped parsley to the pan and mix through, if desired, this is optional.
  • Sprinkle with some shredded cheese. Enjoy!
