Romanian Caramelized Apple Cake

Equipment

Ingredients

  • 3 large eggs
  • 3 medium apples (or 5-6 small ones) (peeled and deseeded)
  • butter , for greasing the baking tray
  • 6 tablespoons sugar, separated
  • 1 cup cherry jam or cherries from cherry compote (deseeded)
  • 3 tablespoons all-purpose flour
  • 1 tablespoon vanilla sugar
  • 2 teaspoons baking powder

Instructions

  • Preheat the oven to 200°C (395°F). Grease the baking tray with butter and sprinkle base and sides with 3 tablespoons of sugar. Set aside.
  • Peel and remove the core of the apples. Place them in the prepared baking tray. Fill the cavity with cherry jam or deseeded cherries from compote. Bake in the preheated oven for 30 minutes.
    Take out to cool for 5 minutes, before adding the batter.
  • While the apples are baking, prepare the cake batter.
    In a large bowl whisk together the eggs with the remaining 3 tablespoons of sugar.
    Gradually add the flour. Mix through until fully incorporated.
    Add the baking powder and the vanilla sugar. Continue whisking until the batter thickens a little bit and has the consistency of light runny batter.
  • Lower the temperature in the oven to 180°C (350°F).
    After the apples were cooling for about 5 minutes, gently pour the cake batter around the apples and bake for 30 minutes, or until toothpick inserted in the center of the cake, comes out clean.
  • Allow the cake to cool for 5 - 10 minutes, before taking it out of the tray.
    Cool completely on the wire rack.
    Can be served warm or cold with a side of whipped cream.
