- 3 large eggs
- 210 grams (1 cup) white granulated sugar
- 150 grams (1 cup) all-purpose flour
- 3 large or 5-6 small apples
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
Preheat the oven to 180 °C (350 °F). Grease and line the baking form with parchment paper. Set aside until needed.
Wash and cut out the middles from the apples. You can also peel them if you like.Roughly cut into pieces, not too thick but also not transparent. Beat the eggs with an electric mixer or a whisk, gradually adding sugar until light in color and frothy. The eggs will lighten up and increase in volume.
In a bowl combine the flour and baking powder. Gradually add the flour mixture into the eggs while beating on low speed until the flour is fully incorporated. Add vanilla extract and mix until fully incorporated.The batter will be thick, but still runny. Place the cut apples into the prepared form, and pour the batter over the apples.
Carefully mix the apples through, to get the batter to the bottom of the pan as well.
Bake the cake in the preheated oven for 40-50 minutes, depending on the size of the form and the oven. Tip: Check the readiness with a toothpick after 30 minutes, if the cake is burning too much at the top but still raw in the middle, cover with tin foil and continue baking. Take the cake out of the oven and allow to cool in the form for about 10 minutes before transferring to a wire rack/plate. Sprinkle some powdered sugar on top of the cake and you are ready to serve. This cake can be served warm or cold, with a side of ice cream or simple whipped cream. As you wish.
