Ingredients

  • 2 x 125 grams salmon fillets
  • 2 tablespoons olive oil
  • 1 tablespoon butter (optional)
  • salt, to taste
  • freshly ground black pepper, to taste
  • few strands of chives or spring onions, for garnish (optional)
  • 2 lemon wedges, for serving (optional)

Instructions

  • Preheat olive oil in a frying pan over medium high heat. Add the butter. Note: Butter is optional here, but it goes really well with seafood, any type of seafood. And it adds this nice butter, creamy flavor to the dish.
  • Rub salmon fillets with salt and freshly ground black pepper, on both sides.
  • Place the salmon fillets in the frying pan, skin down first.
    Fry for about 2-3 minutes, or until the skin is nice golden brown and crispy.
  • Carefully, with a thin spatula, turn the salmon fillets on the other side. Careful no to break it, the flesh is very delicate. Fry for another 3-4 minutes.
  • And you are done.
    Garnish with spring onions or chives and serve with a side of rice or colorful pasta and a lemon wedge. Enjoy!
