- 2 x 125 grams salmon fillets
- 2 tablespoons olive oil
- 1 tablespoon butter (optional)
- salt, to taste
- freshly ground black pepper, to taste
- few strands of chives or spring onions, for garnish (optional)
- 2 lemon wedges, for serving (optional)
Preheat olive oil in a frying pan over medium high heat. Add the butter. Note: Butter is optional here, but it goes really well with seafood, any type of seafood. And it adds this nice butter, creamy flavor to the dish.
Rub salmon fillets with salt and freshly ground black pepper, on both sides.
Place the salmon fillets in the frying pan, skin down first. Fry for about 2-3 minutes, or until the skin is nice golden brown and crispy. Carefully, with a thin spatula, turn the salmon fillets on the other side. Careful no to break it, the flesh is very delicate. Fry for another 3-4 minutes.
And you are done. Garnish with spring onions or chives and serve with a side of rice or colorful pasta and a lemon wedge. Enjoy!
