- 2,5 Liter water
- 1 large onion
- 200 grams chicken backs
- black peppercorns
- salt, to taste
- 2 medium bay leaves
Fill a medium sized pot with approx. 2,5 Liters of water.Place the chicken backs in the water and bring to boil over medium - high heat. Peel the onion, but do not cut it. Keep it whole.
Once the water with the chicken backs is boiling, add the onion, bay leaf, salt and peppercorns.
Boil for about 20 minutes.
And the simple chicken broth is done! You can use it to make soup, risottos, stews and so on.
Store in an air tight container in the fridge for up to 3 days, or freeze it for up to a month.
