Sticky Chicken Drumsticks

Ingredients

  • 8 chicken drumsticks
  • ¼ cup honey
  • ¼ cup hoisin sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 clove garlic, minced
  • 1 tablespoon sesame seeds (optional)
  • 1 tablespoon freshly ground ginger
  • ½ teaspoon chili powder or flakes (optional, if you want spicy)

Instructions

  • In a bowl combine honey, hoisin sauce, soy sauce, rice vinegar, chili powder, garlic, sesame seeds and grated ginger.
    Give it a little taste and see if you want to add more of anything for flavor.
  • Place the chicken drumsticks in a large bowl or a food storage zip bag.
    Pour the marinade over the chicken and toss well, to cover the chicken on all sides.
  • Marinate the chicken drumsticks for about 3 hours, tossing it every hour or so, to make sure everything is covered evenly.
  • Preheat the oven to 200°C (400°F). Cover the baking tray with aluminium foil (this will make the cleaning up process easier). Place a wire rack over the covered baking tray.
  • Take the marinated chicken drumsticks out of the bag/bowl and place on the prepared wire rack.
    Do not discard the marinade, you will use it for basting the chicken.
  • Bake the chicken drumstick for 20 minutes.
  • Then flip the drumsticks on the other side, bast with the marinade and bake for another 15 minutes, basting with the marinade every 5 minutes.
  • After the last round of basting, allow the chicken to cook for a couple of minutes before taking it out, to cook the marinade.
  • Serve with plain basmati rice and a fresh veggie salad.
