Ingredients
- 2 Medium tomatoes
- 2 cups Fresh spinach leaves
- 2 Medium cucumbers
- 2 Tablespoons Olive oil
- 1 teaspoon Balsamic vinegar
- Salt, to taste
Instructions
- Cut tomatoes and cucumbers into small cubes. Place in a mixing bowl.
- Wash and towel dry the fresh spinach leaves. Place in the bowl with tomatoes and cucumbers.
- Add salt, olive oil and balsamic vinegar to the bowl with vegetables and lightly mix, just enough to cover everything in oil.
