Baked Lemon Garlic Chicken

If you want tender, juicy and so full of lemony flavor chicken, then this is the recipe for you. This Lemon Garlic Chicken, just melts in your mouth.

Very easy and pretty fast to make, not considering the marinating time.

In a small bowl combine lemon juice, soy sauce, minced garlic, salt, pepper and ground ginger.

Either in a zip food storage bag or in a bowl, add the thighs and pour over the prepared marinate.Close the bag or cover the bowl with a plastic wrap and place in the fridge for at least 2 hours, to marinate.

Preheat the oven to 170°C (325°F). Cover a baking dish/tray with parchment paper, or you can also oil a baking dish (if the chicken pieces fit into it).

Add the marinated chicken pieces. Spread them into one layer.

Bake for 1 hour. Tip: you can also sprinkle the chicken, at about 15-20 minute intervals, with the juices that the chicken will be producing. This will burn the fat in the chicken skin, and make it more crispy.

Remove the chicken from the oven and let it rest for 5 minutes before serving.
