Ingredients

  • 250 gram couscous
  • 2 medium tomatoes
  • 1 medium cucumber
  • 1 yellow or red bell pepper
  • 1 tablespoon freshly squeezed lemon juice
  • 1-2 tablespoons olive oil
  • 1 teaspoon freshly chopped parsley

Instructions

  • Prepare the couscous according to the packaging.
    Instructions o my packaging said the following: boil 2 cups of water in a pot with a lid. Once boiling, take the water off the heat, add 1 cup of couscous, mix through. Cover with the lid and let stand for 5 minutes. Fluff out with a fork.
  • While couscous is preparing, prepare the vegetables.
    Cut tomatoes into small cubes.
    Cut the cucumber into small cubes.
    Cut the bell pepper into small cubes. (I use yellow, red or orange bell peppers for this salad, they make the salad look brighter, and also they are sweet)
    Chop fresh parsley.
  • Mix olive oil together with the lemon juice.
  • Put fluffed out couscous into a mixing bowl. Add the cubed vegetables and parsley. Add the oil mixture. Mix through. Taste. Add more lemon juice or oil if needed. Enjoy!
