Keto Bacon and Egg Sandwich

Breakfast is one of the more important meals of the day, and therefore you should get as many nutrients as you can in as shorter time as possible. This Keto friendly sandwich is my go to recipe for a healthy breakfast.

All you need is just a few healthy ingredients, including the Keto bread, for which you can find a recipe here, avocado, eggs and a bell pepper and you are well on your way to making this delicious sandwich.

Keto Bacon and Egg Sandwich

Equipment

  • Frying Pan

Ingredients

  • 2 slices Keto bread (see notes for recipe)
  • 2 circles yellow bell pepper
  • 2 eggs
  • 4 slices bacon
  • salt, to taste
  • freshly ground black pepper, to taste
  • 1 avocado, sliced
  • cream cheese, to spread on the bread slices
  • ¼ cup mozzarella cheese, shredded

Instructions

  • Wash and cut off the top of the yellow bell pepper. Carefully remove the seeds. Cut two slices, to have two circles from the pepper. You will break and fry the eggs in those pepper circles.
  • Preheat a teaspoon of oil in a medium frying pan, over medium heat.
    Place the pepper circles flat on the pan.
    Break and egg into the a small bowl. Pour the egg into the pepper circle. Mine leaked a bit outside the circle, I still fried it, just removed the leaked part and placed it at the bottom of the sandwich. 🙂
  • When the egg is almost cooked to your liking, sprinkle some mozzarella on top and allow it to melt slightly.
  • While the eggs are frying, toast two slices of Keto bread. Spread some cream cheese on the toasted slices.
  • Wash and peel the avocado. Slice it into thin slices. Arrange the avocado slices on the bread.
    Place the fried egg with pepper on top.
    Fry the bacon, until golden. Place on top of the egg.
    Sprinkle with some chopped dill (optional).
    Enjoy!
