Keto Bread

Unfortunately normal bread is not allowed on Keto Diet, therefore you have to find or make alternatives. So we found this awesome keto friendly bread recipe, based on eggs and almond flour. The bread turns out light, puffy and quite delicious, considering that no wheat flour was used.

For this recipe you will need an electric hand mixer, to whip the egg whites. 🙂 You can find one here.

Equipment

  • Electric hand mixer
  • Bread baking form
  • Parchment paper

Ingredients

  • 6 large eggs, separated
  • ½ teaspoon white vinegar or cream of tartar
  • ¼ cup (57 grams) butter, melted and cooled
  • 1 ½ cup (145 grams) finely ground almond flour
  • 1 tablespoon baking powder
  • ½ teaspoon salt

Instructions

  • Preheat the oven to 190°C (375°F). Grease a 20 x 10 cm (8"x4") bread pan and line base and sides with parchment paper.
  • In a large bowl, combine egg whites with vinegar/cream of tartar. Using a hand mixer, whip the egg whites until stiff peaks form. You should be able to turn the bowl upside down without anything falling out.
  • In a separate bowl, using a hand mixer, beat egg yolks with melted butter, almond flour, baking powder and salt.
  • Fold in ⅓ of the egg white mix into the egg yolks mixture until fully incorporated, then fold in the rest.
  • Pour the batter into the prepared bread pan and smooth out the top.
  • Bake in the preheated oven for 30 minutes or until the top is slightly golden and a toothpick inserted into the center, comes out clean.
  • Allow the bread to cool for 30 minutes before slicing. It will help the bread settle a little bit and become more uniform.
  • Enjoy!
