When you feel like eating something light and tasty, with paste with veggies is a great option. Just a few ingredients and 20 minutes of cooking time and you have a delicious dinner or lunch.
Boil the pasta. Any kind of pasta that you like or have at home. I used penne.
Chop zucchini, carrots and bell pepper, to desired size.
Heat up olive oil in a frying pan.Add carrots. Fry for about 3 minutes. Add zucchini and bell pepper.
Season with salt and pepper. Add paprika and oregano.
Fry the vegetables for about 4 – 8 minutes, until they reach your desired doneness.
Drain the pasta and add to the frying vegetables.Mix through, fry for about 1 minute and you are done.
You can add chopped parsley to the pan and mix through, if desired, this is optional.
Sprinkle with some shredded cheese. Enjoy!
