Roasted Potatoes with Mushrooms

Super easy to make and super delicious. These Roasted Potatoes with Mushrooms are a great side dish to any meat or fish, or just on its own.

Start by heating up the oven to 200°C (400°F).

Wash, peel and cut the vegetables and mix the vegetables, spices and butter in a large mixing bowl.

Transfer to a baking dish. Bake for 15 minutes, then toss them around with a spatula and bake for another 15 minutes, or until the potatoes are tender and golden brown.

Serve warm with a garnish of fresh rosemary sprigs.

Ingredients

  • 14 small potatoes, cut in half
  • 14 small champignon mushrooms, cut in half or quarters
  • 1 small onion, chopped
  • 4 cloves garlic, minced
  • 2 tablespoons butter, melted
  • 1 teaspoon fresh rosemary, minced
  • pinch of salt, to taste
  • freshly ground black pepper, to taste

Instructions

  • Preheat oven to 200°C (400°F).
  • In a large mixing bowl, combine all the ingredients and toss to coat evenly.
  • Arrange the mixed ingredients in a baking dish and bake for 15 minutes.
    Toss with a wooden or silicone spatula and bake for another 15 minutes, or until the potatoes are tender and golden brown.
  • Remove from the oven and garnish with some fresh rosemary sprigs.
