Super easy to make and super delicious. These Roasted Potatoes with Mushrooms are a great side dish to any meat or fish, or just on its own.

Start by heating up the oven to 200°C (400°F).
Wash, peel and cut the vegetables and mix the vegetables, spices and butter in a large mixing bowl.
Transfer to a baking dish. Bake for 15 minutes, then toss them around with a spatula and bake for another 15 minutes, or until the potatoes are tender and golden brown.

Serve warm with a garnish of fresh rosemary sprigs.

Roasted Potatoes and Mushrooms
Ingredients
- 14 small potatoes, cut in half
- 14 small champignon mushrooms, cut in half or quarters
- 1 small onion, chopped
- 4 cloves garlic, minced
- 2 tablespoons butter, melted
- 1 teaspoon fresh rosemary, minced
- pinch of salt, to taste
- freshly ground black pepper, to taste
Instructions
- Preheat oven to 200°C (400°F).
- In a large mixing bowl, combine all the ingredients and toss to coat evenly.
- Arrange the mixed ingredients in a baking dish and bake for 15 minutes. Toss with a wooden or silicone spatula and bake for another 15 minutes, or until the potatoes are tender and golden brown.
- Remove from the oven and garnish with some fresh rosemary sprigs.Enjoy!
