Spaghetti Aglio-e-Olio with Salsiccia

Ingredients

  • 450 grams spaghetti, uncooked
  • 4 tablespoons olive oil, separated
  • 450 grams Italian pork sausage or Salsiccia, casing removed
  • ¼ cup finely minced garlic
  • 1 tablespoon red chili flakes
  • 1 cup finely grated Parmesan, plus more for garnish
  • ¾ cup finely chopped parsley (optional)
  • 1 teaspoon salt

Instructions

  • Add the dried spaghetti to large pan, cover the pasta fully with water and set over medium heat. Salt the water.
  • While the pasta water is heating up, in a large frying pan (large enough to fit all the pasta) heat up 2 tablespoons of olive oil over medium heat until very hot.
    Add the uncased Italian pork sausage and fry for about 3-4 minutes.
  • Use a spoon or spatula to break the sausage into bite size pieces. Flip the pieces to brown on all sides.
    Once all the sides are browned and the pieces are cooked through, take them out into a medium bowl (off heat).
  • Check on the pasta. Once the water started boiling, cook the pasta for about 2-3 minutes. (the pasta will continue cooking together with the sauce).
    Turn off the heat, but the leave the pasta in the water.
  • In the main pan, drain half of the sausage oil, then add another 2 tablespoons of olive oil and heat up over low heat.
    Add the garlic and chili flakes and sauté for about 3 minutes on low heat.
  • Add about 2¼ cup of the pasta cooking water to the pan with garlic and chili. Scrape up any browned bits form the bottom, turn up the heat to medium and bring the water boil.
    Cook for about 4-5 minutes, or until the water is reduced by half. Turn the heat down to low again.
  • Using forks, or tongs, carefully transfer the pasta out of the cooking water and into the pan with garlic sauce.
  • Add the grated Parmesan, parsley (optional), sausage pieces and salt. Toss together over low heat until the cheese melts and the sauce coats all the pasta.
    Taste and season more if needed.
  • Serve immediately. Garnish with fresh parsley and more Parmesan.
  • Enjoy!
