Ingredients

Marinade:

  • 400 grams pork, chopped into bite sized cubes
  • 1 teaspoon salt
  • 1 teaspoon corn flour
  • 1 large egg

Frying:

  • 1 cup corn flour
  • 500 ml vegetable oil

Sauce:

  • 2 tablespoons vegetable oil
  • 2 teaspoons garlic, minced
  • ½ green bell pepper, chopped
  • ½ red bell pepper, chopped
  • â…” cup pineapple, chopped or from a can
  • ¼ cup caster sugar
  • ¼ cup rice vinegar
  • 2 tablespoons ketchup

Instructions

  • Begin by marinating the pork. Cut the pork into bite size cubes.
  • In a medium bowl combine all the ingredients for the marinade and mix through. Cover with plastic food wrap and place in the fridge for 20 minutes.
  • Preheat the oil for frying in a large deep frying pan or a wok, over medium heat.
Take the pork out of the fridge, and coat with corn flour on all sides.
  • Once the oil is hot, drop pork pieces into the oil one by one, carefully, the oil is very hot. Fry for about 3-4 minutes, until the coating is golden and the pork is cooked through. Take the pork pieces out, place on a paper towel and set aside.
  • You can use the same wok, just dispose of the old oil, or use another deep pan to make the sauce.
Heat up the oil and fry the minced garlic until fragrant, about 30 seconds.
Add the chopped bell peppers and cook until they soften, about 2-3 minutes. Add the pineapple chunks and warm through, another 1 minute.
  • Add the sugar, rice vinegar and ketchup. Mix through and bring the sauce to boil.
  • Add the pork to the sauce and coat evenly with sauce.
  • Here you can sprinkle some sesame seeds on the pork, if you want.
Serve with a side of plain rice.
  • Enjoy!
