- 2 Medium tomatoes
- 2 cups Fresh spinach leaves
- 2 Medium cucumbers
- 2 Tablespoons Olive oil
- 1 teaspoon Balsamic vinegar
- Salt, to taste
Cut tomatoes and cucumbers into small cubes. Place in a mixing bowl.
Wash and towel dry the fresh spinach leaves. Place in the bowl with tomatoes and cucumbers.
Add salt, olive oil and balsamic vinegar to the bowl with vegetables and lightly mix, just enough to cover everything in oil.
