Fast and Easy Yellow Rice

Very simple, yet so effective looking, this bright yellow rice will be a great side dish to any kind of poultry or fatty meats.

Ingredients

  • 3 tablespoons butter
  • ½ cup long - grain white rice
  • 1 teaspoon fresh minced garlic
  • 1 small onion, peeled and chopped
  • 1 teaspoon ground turmeric
  • 2 cups chicken broth (see notes)
  • ½ teaspoon salt
  • ground black pepper, to taste
  • 2 tablespoons fresh parsley, chopped

Instructions

  • Heat up the butter in a large frying pan, or sauce pan over medium heat
  • Add the rice and fry until light brown.
  • Add garlic, onion and turmeric.
    Stir until well combined.
  • Slowly stir in the chicken broth and raise the heat to medium - high.
    Bring to boil. Lower the heat to low, cover with a lid.
  • Simmer the rice for about 20 - 25 minutes, or until the rice is cooked through.
    Remove from heat and add chopped parsley.

Notes

For this recipe, I used self prepared chicken broth.
