- 2,5 Liter chicken broth
- 2 medium sweet potatoes
- 3 medium carrots
- 1 large onion
- 3 medium potatoes
- salt, to taste (optional)
- freshly ground black pepper, to taste (optional)
- Sour cream, for garnish
- 2 tablespoons butter
- ΒΌ cup heavy cream
If you are making your own broth, then prepare the chicken broth.
Peel and roughly chop the vegetables.
Place in a medium pot. Fill with chicken broth, so it just covers the vegetables. Season with salt and pepper if necessary. Bring to boil and cook for approximately 20-30 minutes. Until the white potatoes are cooked.Once done, take off the heat.Do not drain the water! Take the hand mixer and blend everything, until smooth.Add the cream and the butter, blend together until well combined. Serve with sour cream and buttered toast.Enjoy!
