Grill or bake the aubergines until soft. A toothpick should go through easily. For best results grill them or bake them on an open flame. This offers the best flavor.
Peel the skins and cut the pulp into cubes. Chop the onion coarsely, not too small.
Shred the eggplant pulp with a blender, together with the oil and salt.
Manually mix in the chopped onion using a spoon.
Do not blend it again after adding the onion! The onion will provide the crunch of the spread.
Serve with nachos, dry crisp bread or cracker bread.
