Galina’s Cottage Cheese Pudding

As a kid I was never really into cottage cheese or semolina. But as you get older and wiser, you realize that cottage cheese is good for you and it tastes really good, especially if served with something sweet. =)

This particular recipe was given to me by my sister. And this was the very first time I made it, and as you can see it turned out perfect. The recipe is super easy to make and the due to the absence of flour, the pudding is also low in calories. A perfect dish for breakfast, and to get those fussy eaters to eat some delicious cottage cheese and semolina.

Enough talk, let’s get down to cooking.

First of all let’s preheat the oven to 180°C (356°F). Grease and line a 18 cm baking spring form with parchment paper. I also made a border from parchment paper to line the sides of the form, in case the pudding grows too high, not to go over the sides of the form.

In a medium bowl combine semolina and sour cream. Let it stand for 30 minutes. Semolina will start absorbing the moisture from the sour cream and will grow in size.

In another bowl combine cottage cheese and eggs.

Add sugar and baking powder, mix well to combine.

When 30 minutes have passed, add the expanded semolina/ sour cream mixture into the cottage cheese mixture. Mix until well combined.

Transfer the batter into the prepared form and bake for 50-60 minutes on the middle rack of the oven, or until firm to the touch, has a golden top and a toothpick inserted in the center, comes out clean.

Take out of the oven, allow to cool in the form for about 10 minutes.

After 10 minutes passed, carefully take out of the from and transfer to a plate.

Can be served warm or cold.

Serve with sour cream or condensed milk.
