Preheat oven to 230°C (450°F).
In a bowl mix together salt, pepper, paprika and garlic powder.
In a baking dish, place the chicken breasts in a single layer.Brush with melted butter, or oil on both sides.
Sprinkle evenly with the spice mixture on both sides.
Bake for 15 – 18 minutes.
Once the chicken is cooked, remove from the oven. Transfer the chicken breast to a clean plate, cover loosely with aluminium foil and let stand for 5 – 10 minutes.
Store in an air-tight container, in the fridge or up to 3 days. Or freeze up to 3 months.

- 1 tablespoon melted butter

How to brine chicken breasts:
- Fill a large bowl or food storage bag with 2 cups of warm water and dissolve ¼ cup of salt in it.Add the chicken breasts and leave for at least 15 minutes. Remove the chicken breasts from the brine, rinse with cold water and pat dry with a paper towel.
