One of the days I really felt like making something easy, fast and very chocolaty. So I rummaged through the kitchen cabinets to see what ingredients I have and what could be made from them.
As it turned out, I had all the right ingredients to make easy and fast chocolate muffins. Even had some extra chocolate ….. for that extra chocolaty punch. =)
Fast, easy to make and need just a few ingredients, these chocolate muffins are so light in texture, yet so full of flavor. They will make you want to come back for more and more and more. =)

Preheat oven to 170°C (338°F). Line muffin tray with paper muffin cases or grease the tray.

In a medium bowl sift together flour, cocoa, salt and baking powder. Add sugar, mix well.

In a separate bowl beat the eggs with a whisk or fork, until lightly beaten.
Add the milk, oil and the vanilla extract. Mix well.

Note: You can add milk, oil and eggs directly into the bowl with the flour mixture, however I like to mix the dry ingredients and wet ingredients in separate bowls before combining them together, I think its just easier to mix like that and to make sure everything is incorporated and mixed evenly.
Mix the dry and the wet mixtures together, until well blended.

Mix in the chocolate chips. (I made a bit more of the chocolate chips, just chopped milk chocolate, to sprinkle on top.)

Spread the batter between the prepared muffin cups, filling about ⅔ of the muffin cup.

Bake for 20 minutes, or until a toothpick inserted into the center of the muffin, comes out clean.

Allow to cool in the tray for about 10 – 15 minutes. Transfer to a wire rack to cool completely.

- 25 grams cocoa powder
- 2 teaspoons baking powder
- 175 grams caster sugar
- 175 ml milk
- 2 large eggs
- 100 ml olive oil or vegetable oil
- 75 grams plain chocolate chips
- 1 – 2 teaspoons vanilla extract
- salt, to taste
