Sweet Potato Cream Soup

Very easy to make, this creamy and delicious sweet potato cream soup, will make you want to come back for more. All you need is just a few ingredients and 30 minutes of time.

If you are making your own broth, prepare the broth. I used home made chicken broth for this recipe.

Wash, peel and roughly chop the vegetables (potatoes, onion, carrots and sweet potato).

Place in a medium pot, and fill the pot with chicken broth, just to cover the vegetables.

Bring to boil and cook for about 20 – 30 minutes. Or until the white potatoes are cooked through.

Once cooked, remove from heat. Do not drain.

With a hand mixer, blend the vegetables and the liquid together, until smooth. Might take a couple of minutes.

Add the heavy cream ad butter. Blend until smooth and well combined.

Serve with sour cream and buttered toast.

Ingredients

  • 2,5 Liter chicken broth
  • 2 medium sweet potatoes
  • 3 medium carrots
  • 1 large onion
  • 3 medium potatoes
  • salt, to taste (optional)
  • freshly ground black pepper, to taste (optional)
  • Sour cream, for garnish
  • 2 tablespoons butter
  • ¼ cup heavy cream

Instructions

  • If you are making your own broth, then prepare the chicken broth.
  • Peel and roughly chop the vegetables.
  • Place in a medium pot.
    Fill with chicken broth, so it just covers the vegetables. Season with salt and pepper if necessary.
  • Bring to boil and cook for approximately 20-30 minutes. Until the white potatoes are cooked.
    Once done, take off the heat.
    Do not drain the water!
  • Take the hand mixer and blend everything, until smooth.
    Add the cream and the butter, blend together until well combined.
  • Serve with sour cream and buttered toast.
    Enjoy!
