Keto Salmon with Orange Garlic Jus

Recently me and my husband started a new diet, with all the delicious cakes and muffins that we were cooking lately, a new diet is much needed. The diet is called a Ketogenic Diet, which is a high-fat, high-protein, low-carb diet. So far we have cooked a few recipes and we love them. The best thing for us, is that we don’t have to cut the protein from our diet, and there are so many delicious things you can do with proteins.

Below is a keto friendly recipe for Salmon with Orange Garlic Jus served over Cauliflower Rice.

Keto Salmon with Orange Garlic Jus

Equipment

Ingredients

For the salmon:

  • 300 grams salmon fillet
  • 1 teaspoon oregano
  • salt, to taste
  • freshly ground black pepper, to taste
  • 1 teaspoon olive oil
  • 1-2 cups Cauliflower rice (see notes)

For orange garlic jus:

  • 2 teaspoons ginger, minced
  • 2 tablespoons reduced-salt soy sauce
  • 1 cup fresh orange juice
  • 1 lemon juiced
  • 2 teaspoons garlic, minced
  • 2 teaspoons erythritol (or other sugar/honey substitute)
  • 2 teaspoons butter

Instructions

Prepare the Orange Garlic Jus:

  • In a medium saucepan, over medium heat add orange juice, soy sauce, erythritol (or another alternative to honey), lemon juice, butter, garlic and ginger.
  • Bring to a simmer, turn the heat to medium-low and simmer until the sauce thickens slightly. This might take up to 30-40 minutes. You can increase the heat to reduce the cooking time, but keep and eye on it, not to burn it.
  • This part is optional, but I wanted my sauce to look smooth and without chunks, so I strained the thickened sauce through a small sieve, to get it nice and smooth.
  • You can transfer the sauce into a small container, if you have a lot of left over sauce, you can store it in an air tight container in the fridge for about 5 days.

Prepare the Salmon:

  • Preheat the oven to 220°C (430°F). Line a baking tray with parchment paper and set aside.
  • Wash, scale and cut salmon fillet, if needed.
    Brush salmon fillets with olive oil and season with salt pepper and oregano.
    Place on the prepare baking tray, skin side down.
  • Bake for 15-20 minutes, depending on the thickness of the fillets
  • After the salmon fillets have cooked, take them out of the oven and brush the tops with some Orange Garlic Sauce.
  • Serve over cauliflower rice and sprinkle some more sauce on the plate.
    You can add lemon wedges, but there is really no need for them, the sauce does all the work.
