Mediterranean Chicken Drumsticks

Summer is here and you feel like having a light and delicious dinner, but you still want something meaty? Well this light and tasty Chicken Drumstick recipe is exactly what you need. With delicious lemon and garlic flavors that will make you feel like you are dinning in a seaside restaurant in the Mediterranean.

And to make this delicious recipe, you just need a few thing and a a bit of time.

Start with preparing the spices. Mix all spices in the bowl. Add the chicken drumsticks and toss through.

Cut the onion into wedges, chop the garlic cloves into cubes. Add the onion wedges, garlic, lemon juice and zest and olive oil to the chicken. Toss well, to cover the chicken.

Allow to marinate for at least 30 minutes at room temperature, or if time allows 2-4 hours in the fridge.

Preheat the oven to 230°C (450°F).

Slightly oil the baking tray.Arrange the chicken drumsticks on the prepared baking tray, top with lemon wedges and bake in the preheated oven for about 35 minutes, or until chicken is cooked through and tender.

Serve warm with a side of fresh veggies salad.

Ingredients

  • 8 chicken drumsticks
  • pinch of salt
  • 1 tablespoon dry oregano
  • 1 tablespoon freshly ground black pepper
  • teaspoons fresh coriander, chopped
  • 1 teaspoon paprika
  • ½ teaspoon cumin
  • 12 cloves garlic, roughly chopped
  • 1 medium onion, cut into wedges
  • Zest and juice of 2 lemons + 1 lemon sliced into wedges
  • ¼ cup olive oil

Instructions

  • Wash and pat dry the chicken drumstick with a paper towel.
    Season with salt, outside and under the skin.
    If the time allows, place the chicken in an uncovered dish in the fridge for a few hours or overnight.
  • In a medium bowl or a zip bag combine the dried spices: oregano, freshly ground black pepper, coriander, paprika and cumin.
    Add the chicken and toss through.
  • Add the onion, garlic, lemon juice and lemon zest and olive oil to the chicken and toss through, making sure the chicken drumsticks are covered thoroughly.
