Ingredients

  • 2 Medium tomatoes
  • 2 cups Fresh spinach leaves
  • 2 Medium cucumbers
  • 2 Tablespoons Olive oil
  • 1 teaspoon Balsamic vinegar
  • Salt, to taste

Instructions

  • Cut tomatoes and cucumbers into small cubes. Place in a mixing bowl.
  • Wash and towel dry the fresh spinach leaves. Place in the bowl with tomatoes and cucumbers.
  • Add salt, olive oil and balsamic vinegar to the bowl with vegetables and lightly mix, just enough to cover everything in oil.
