Super Simple Seafood Curry

I think I have discovered a new favorite type of dish, curries. I always thought that curries take forever to cook, like stews, but as it turns out it’s just the opposite. So fast and simple, and the taste is amazing. Just the right amount of spiciness and flavor …. mmmm 🙂

Here I would like to share with you a super fast and simple seafood curry that takes just 20 minutes to cook and requires a minimal amount of ingredients.

Super Simple Seafood Curry

One of the fastest and easiest curries I have made so far. Only takes about 20 minutes from scratch.

Equipment

  • Frying Pan

Ingredients

  • 1 tablespoon vegetable oil
  • 1 can (400 grams) coconut milk
  • 1 tablespoon fish sauce
  • 1 tablespoon brown sugar
  • 1 red or yellow bell pepper
  • ¼ cup Thai red curry paste (medium spiciness)
  • 1 cup snow peas
  • 2 tablespoons lemon or lime juice
  • 200 grams white fish, cut into cubes (I used polar cod)
  • 200 grams shrimps, cleaned and peeled
  • ½ cup fresh basil, chopped

Instructions

  • Heat up the vegetable oil in a deep frying pan over medium heat.
    Add the curry paste and cook for about 1 minute.
  • Add the remainder of the ingredients: fish, shrimps, snow peas, coconut milk, fish sauce, lemon/lime juice, bell pepper, everything except for the basil.
  • Bring to boil, reduce the heat to low and simmer until the fish and shrimps are done, will take between 7-9 minutes.
  • Take the curry off the heat, stir in the chopped basil and allow to stand for about a minute before serving.
  • Serve warm, with or without a garnish of plain rice and a lemon/lime wedge.
  • Enjoy!
