Chicken Schnitzels

Living in Austria, the most popular dish you will find here is a Schnitzel. Usually a schnitzel is made from pork or veal, but we decided to put a little twist on it and made it with chicken. 🙂 Hope you will enjoy it as much as we did.

Take one chicken breast, wrap it in some food plastic wrap. Flatten it out with a steak hammer. Like in the picture.

Place the flour into a large flat plate. Add the Cajun spice mix, add the salt and pepper. Mix through.

Place the bread crumbs into another large flat plate.

In a deep plate slightly whisk the eggs.

Now take the flattened chicken breast and coat with the prepared flour on all sides.

Then dip it into the whisked egg. Coat on all sides.

Now coat with bread crumbs on all sides.

Heat up the oil in a large frying pan/skillet over medium heat. Fry the coated chicken breast until golden brown on both sides and the chicken is cooked through. This will take about 6-7 minutes per side.

Repeat for all the remaining chicken breasts.

Depending on the size of the pan and the chicken schnitzels, it might be better to do one at a time, not to overcrowd the frying pan.

Once the schnitzels are done, transfer to the paper towel, to absorb excess oil.

Serve warm with a side of potato salad, or fresh veggie salad, or any side dish you prefer.

Ingredients
