Filet mignon à la Elf

This is the easiest way to get the soft and tender filet mignon done perfectly.

The french call it ‘filet de bœuf’ and consider it one of the most desired cuts of beef.

The nicely caramelized garlic goes really well beside the steak, together with potato and carrot wedges and some broccoli plus a fine glass of red: Zinfandel or Primitivo.

Filet mignon à la Elf

Filet mignon is one of the best beef cuts and it comes from the tip of the tenderloin.

Ingredients

  • 2 slices filet mignon steaks
  • 2 sprigs fresh rosemary
  • 1 head garlic
  • 100 g butter

Instructions

  • Bring the filets at room temperature and add salt and freshly ground pepper to them.
  • Melt the butter into the frying pan at low temperature.
  • Add the rosemary sprigs and half of the garlic head and increase temperature to medium high.
  • As soon as the garlic starts getting that nice brown color, place the steaks into the pan.
  • Constantly baste the filets with the rosemary garlic sauce while frying them 2 minutes per side.
  • Take them out of the pan and let them rest three to five minutes before serving. Top with herb butter for a nice effect.
