Fluffy Pancakes

This recipe for pancakes is super easy to prepare and does not require a lot of time to cook either. I discovered this recipe a few years back and have been using it ever since.

The pancakes turn out puffy and nicely, evenly browned on both sides.

So puffy and airy, American style pancakes, do not require oil for frying, therefore are a bit lighter on the calories.

Fluffy Pancakes

Ingredients

  • cups milk
  • 2 cups flour
  • ¼ cup white granulated sugar
  • 4 teaspoons baking powder
  • ¼ teaspoon baking soda
  • ½ teaspoon salt
  • 1 large egg
  • ¼ cup butter, melted
  • 2 teaspoons vanilla extract

Instructions

  • Melt the butter.
  • Preheat a wide flat frying pan (I used crepe pan) or a pancake grill.
  • In a medium bowl combine flour, sugar, baking powder, baking soda and salt. Set aside.
  • In another bowl whisk together the egg and milk.
  • Add the milk/egg mixture to the dry ingredients and add melted butter. Whisk everything well and until all the lumps are gone.
  • Pour about ¼ cup of the batter onto the heated up frying pan/grill and cook until bubbles appear on the surface.
  • With a thin spatula, flip the pancake and cook until browned on the other side.
    Repeat until all the batter is finished.
  • Serve with desired berries, fruits, honey, maple syrup or anything else you desire.
    Can be eaten as both sweet and savory options.
